So I was a little lazy tonight and cooked using a pre-made sauce from the supermarket. I used Nado’s Curry Coconut Peri-Peri Cooking Sauce. I found that this combination took 30 minutes to cook and served enough for 4 people.

It just goes to show that cooking in the bush with a camp stove can still have great results and in a reasonable amount of time.

  • 1 jar of Coconut Curry Cooking Sauce
  • 700 grams of chicken breast
  • 4 cups of rice
  • 1 brocolli
  • 2 carrots
  • 1 Capsicum
  • 2 small chilies
  • handful of green beans
  • 2 tablespoons of butter
  • Salt and Pepper

Put the rice onto boil

Chop up all the vegetables and add to a frying pan with a tablespoon of butter. Stir for a few minutes, add some water and leave to simmer. Add some salt and pepper. Mix every now and again till no water remains.

In a second frying pan, whist the veggies are simmering, add a table spoon of butter and brown the chicken. Then add the Coconut cooking sauce and mix till it’s warm.

Add the whole lot into the frying pan with the veggies and mix it all together.

Serve with rice.
